Nothing beats a range hood for venting smokes and fumes. Be sure to get one the right size: It should be at least as wide as the cooking surface it goes over. It's also important to get the right type of range hood, of which there are three.
An under cabinet range hood mounts to the bottom of a wall cabinet through which ductwork can route to an adjoining wall, soffit or ceiling.
A wall chimney range hood is used when there are no cabinets and mount with exposed vent stacks in the wall.
Lastly, an island range hood is mounted and vented through ductwork in the ceiling. Because they lack a or cabinet alongside them to help funnel fumes, you should get one bigger than the cooking surface.
